Everyone knows Saffron, as it is one of
the ingredients of Paella.
But, there is saffron and SAFFRON.
Gâtinais saffron is acknowledged as the "finest in the world", and
this has been so for a very long time, as already in 1762, Duhamel du
Monceau wrote, "It is astonishing that this crop is still so little
known today, even though it has been cultivated for a long time in the
Gâtinais… Its superior quality is derived from the nature of the soil,
the climate and perhaps the cultivation…"
Since 1987, farmers have relaunched the cultivation of saffron in the
Gâtinais and have grouped themselves into the Syndicat des Safraniers
du Gâtinais as well as filing for a trademark for their produce.
Several of our “Logis de France” chefs are already using this " One
thousand year old red gold from the Gâtinais" for the delight of their
gourmet guests.
