The art of getting a pear into a
bottle
A young lad wanted to put Paris in a bottle!
In Olivet, we prefer just putting pears in bottles. Not because it is
easier, because there is nothing simple about the method, but for the
taste and the beauty of the pear bathing in a fragrant eau de vie…
Since the first pear trees were cultivated by the monks at Micy, the
Olivet producers have been distilling part of their harvest to make
Pear William eau de vie, known as "Bon Chrétien" (Good Christian).
This has made the name of Olivet famous all over the world.
Way back in 1933, the producers got together to form the Coopérative
Vinicole et Fruitière d'Olivet - the Covifruit. Since then, over 500
tonnes of hand picked pears are distilled every year to provide about
34,000 litres of 50° proof alcohol to fill 30, 000 flute bottles (70
cl), 7,000 carafes and 4,000 magnums with pear eau de vie. This
production is sold directly at the Covifruit shop as well as in
supermarkets and to wholesalers supplying other retail outlets.
Covifruit also has mail order and export sales activities.
