Vineyard:

Our Appellation d'Origine Contrôlée vineyard covers 8 hectares on the
outskirts of Gien, on a flint-clay soil terrace overlooking the Loire.
Our white wine, produced from Sauvignon grapes, has both an ample nose
and palate, and offers flavours of citrus fruits and white blossom.
The red wines, from a blend of Gamay and Pinot Noir grapes, ally a
full body structure with notes of red fruits.
Our rosé wine, produced from Gamay and Pinot Noir grapes, offers a
refreshing, well balanced pleasant experience.
Our cellars are open to the public for discovering our wines every day
from 8h to 12h and from 14h to 18h.
WHITE AND ROSE WINES:
After moderate pressing and allowing 24 to 48 hours for the lees to
settle, fermentation proceeds at a temperature of 17 – 18° C,
encouraging the appearance of a subtler and more intense nose. This is
following by an élevage (rearing) in vats for 6 to 8 months with lees
contact prior to the stabilisation and clarification operations.
Bottling is performed from March to June. These wines are to be druck
young (up to 3 years).
RED WINES:
The harvested grapes are completely cleaned of growth debris before
being placed in vats for soaking and fermentation at a temperature
between 25 and 30° C in order to achieve an optimum extraction of
natural colourants. This extraction is also enhanced by the wine being
pumped over in the vats twice a day. The maturing period of the wine
with the grape skins in the vats lasts for a period of 8 to 12 days.
Then we pass on to the malolactic fermentation process. Thereafter,
several racking procedures are performed during the various
clarification phases. The wine is bottled 10 months after the harvest.
These wines can be laid down for three to five years.
