Purpose and objective:

Promote the Gâtinais, its products and Gâtinais Saffron in
particular. Enhance the value of this product as the noblest
of spices, and rediscover its dyeing and medicinal qualities.
History of Saffron:

Cultivated in the Gâtinais since the end of the 13th century,
near Boynes, saffron enjoyed a worldwide reputation from the
end of the 14th century until the beginning of the 20th century.After
completely disappearing for 50 years, since 1987, saffron
is once again cultivated in the Gâtinais. The Confrérie des
chevaliers du Safran du Gâtinais has been founded to help
promote saffron and revive the honour of our local traditions.
Logo : la fleur de safran.
Symbol: an old hoe, a two pronged tool formerly used
for tending the soil between the bulbs.
Motto: Use saffron as often as possible:"Saffron
comforts, excites your joy,Closes all wounds, and repairs
the liver."This is how the future doctors at the Salerno
Medical School in Italy, the most famous faculty of medicine
in the Middle Ages, learned about the properties of saffron.
