The aim of the Pithiviers Brotherhood is to spread awareness and appreciation of
the "Pithivier cake", a speciality of out town, by possibly linking it with
other Gâtinais specialities and products. Every year, the Brotherhood organises
a major event during which its holds it annual festival, open to the public, and
where it awards prizes to the winners of the Best Pithiviers Cake of the Year
Competition.
History:

From its origins, the town of PITHIVIERS has always been a major crossroads for
the trade and storage of cereal crops intended for the provinces in Eastern Gaul.
Thanks to trading relations with the countries in the South and East, the
primitive Carnute cake, enriched with almonds and a legacy of the Roman
occupation, gave birth to the "Pithiviers fondant" cake. Later, in the 17th
century, the invention of flaky pastry enabled the "Pithiviers feuilleté" to be
created and it became a favourite of the Master Pastry Chefs of France. But the
"Pithiviers fondant" with its glaze and dried fruit decoration is the local
speciality that has gained an excellent reputation in numerous gastronomic
exhibitions and competitions.
